Makes 12 Cacao Truffles

THE GOODNESS

4 Tlb Alchemy Cacao Elixir
1 cup raw cashews
1/2 cup sunflower seed paste
1/4 cup date paste
2 Tlb cacao butter, grated
1/4 cup black tahini
2-3 Tlb maple syrup
1/2 tsp cinnamon
1/2 tsp vanilla powder
1 tsp rosehip, dried + ground
pinch of salt

Coating
Powdered pomegranate, cacao powder, coconut, crushed seeds and nuts or coat in your favourite melted chocolate and set in freezer

MAKING THE GOODNESS

  1. In a food processor or thermomix blitz all the ingredients, if you don’t have any cacao butter use a little coconut oil.
  2. The mix may release further oils and it will have the consistency of dough but don’t worry, it makes for a dense bite.
  3. Roll into 30 gram balls and set on baking paper in the freezer.
  4. You can coat frozen truffles in melted chocolate and place back in freezer to set or simply roll the cold truffles in your choice of coating dust.

To make the sunflower seed butter blend sunflower seeds in a high speed blender until a paste forms.
